BREAKING NEWS: 28 SONGS PARTNERS WITH Z’S PIZZA CHEF FOR NEW PIZZA PARLOR šŸ•

We’ve been teasing this one for a while, and now it’s official: a brand-new pizza concept is headed to Boerne. Carmella’s Pizza Parlor will open next door to 28 Songs Brewhouse + Kitchen, born from a partnership between the 28 Songs team and Chef Zachary Disch — the talent behind the much-loved Z’s Pizza.

If you’ve been in Boerne long, you’ll remember Z’s as one of the town’s favorite pizza spots until it closed last year. Now Chef Disch is back, teaming up with Don and the crew at 28 Songs to create a new parlor that blends the brewery’s community-driven vibe with his passion for authentic, high-quality pizza.

The menu will feature a curated selection of classic and contemporary pizzas, served in the tradition of hand-tossed, thin-crust, crispy New York style while also highlighting a Detroit-style pan pizza as the house specialty. Guests can also look forward to grinders, house-made meatballs and sausage, gelato, and other specialties—celebrating fresh ingredients, traditional techniques, and a dedication to craftsmanship. A small beer and wine bar and family-friendly arcade games will round out the nostalgic pizza-parlor experience.

Carmella’s is expected to open beginning of 2026, with more details on the menu and opening date coming in the weeks ahead. One thing’s for sure: pizza night in Boerne is getting a major upgrade.
